Watermelon Cucumber Feta Salad
Just a few ingredients, and you've got a refreshing summer salad! Salty feta and cool watermelon are great paired up with this easy vinaigrette dressing. Pillsbury

Ingredients
Watermelon Salad
- 6 cups seedless 1-inch cubes watermelon (from 5-lb watermelon)
- 1 cup sliced quartered cucumber
- 1/2 small red onion, thinly sliced and quartered
- 1 cup crumbled feta cheese (4 oz)
Dressing
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tbsp chopped fresh mint leaves
Instructions
- 1-In small bowl, using wire whisk, mix vinegar, olive oil, salt and pepper. Stir in mint.2-In large bowl, mix watermelon, cucumber, onion and 3/4 cup of the feta cheese.3-Pour dressing over watermelon mixture; toss gently to combine.4-Sprinkle salad with remaining feta cheese. Garnish servings with additional mint, if desired.
Notes
- Try adding other additions to your salad, such as blueberries, strawberries or kalamata olives.
- The salad can be chilled for up to 2 hours. The watermelon keeps releasing its juices so the longer it stands, the more liquid will gather in your bowl.
